Black Bean Soup

1 cup diced onion
2 cloves garlic, minced
1 1/4 cup water
2 15oz cans black beans
1 15oz can stewed tomatoes
1 cup diced, peeled potato
1/2 t. dried thyme
1/2 t. cumin
1/2 T. Tabasco sauce or other hot sauce
Sour cream as condiment

Sauté onion and garlic in a bit of water until translucent. Add 1 cup water, black beans with their juice, tomatoes, potatoes, thyme and cumin. Bring to boil, reduce heat and simmer for 25 minutes.  Thin with more water as necessary. Add Tabasco to taste.
