Mom’s Cheesecake

3  8oz. packages cream cheese, at room temperature
5 eggs
1 cup sugar
1/4 tsp. salt
3/4 tsp. almond extract (or vanilla)
2 T. sugar
1 1/2 c. sour cream
1/2 tsp. vanilla

Beat cream cheese with mixer till soft.  Add eggs, 1 cup of sugar, salt and almond extract.  Beat until smooth and thick.  Pour into buttered 9″
springform pan.  Bake at 325 degrees for 45-50 minutes or until set.  Remove from oven and cook on cake rack for 20 minutes (top will crack).  Mix sour cream and vanilla together in a small bowl.  Pour over cake and return to 325 degree oven for 10 minutes. Cool and then chill in refrigerator.
