Mom’s Walnut Cheddar Loaf

2 c. chopped onion
1 c. ground walnuts
1 c. grated cheddar cheese
2 T. lemon juice
2 eggs, beaten
1 1/4 c. brown rice, cooked

Sauté onions in water or a bit of oil.  Mix all ingredients and place in greased loaf pan. Bake at 350 for 30 minutes. Serve with cheddar cheese soup (warmed) as sauce or with ketchup.
