1 medium onion, chopped
2 cloves garlic, crushed
1 T. oil
1 15oz. can black beans, rinsed and drained
1 16oz. can stewed tomatoes
1/2 c. salsa or picante sauce
1 T. chili powder
2 t. cumin
1 t. oregano
Pasta of choice (I prefer linguini)
Sauté onion and garlic in oil; add all ingredients (except pasta), and simmer for 15-20 minutes. Serve over pasta.
Note: Can also be served as a burrito filling.
