Vegetarian Chili

4 large onions, chopped
1 large green pepper, seeded and chopped
3 T. oil
1 T. each mustard seeds and chili powder
1 tsp. each cumin seeds and unsweetened cocoa
1/2 tsp. cinnamon
1 can tomatoes (about 1 lb.)
3 cans kidney beans, undrained (about 3 lbs. total)
1 cup water
1 6oz. can tomato paste
Shredded cheddar cheese (optional)

In large kettle, sauté onions and green peppers in oil over medium heat. Add mustard seeds and cook for 1 minute.  Add remaining ingredients, reduce heat to a simmer, and cook uncovered for about 40 minutes. Stir frequently and serve with cheddar cheese as a garnish.
