Mary’s Pepper Relish

From Mary (of Paul and Mary) – Casey’s Godparents

  • 2 cups prepared peppers (about 9 or 10 – can use red or green or a mix)
  • 3/4 cup white vinegar or apple cider vinegar
  • 3 1/2 cups of sugar
  • 1 box sure-Jell Fruit Pectin

First, prepare the peppers: cut open and discard seeds. Chop all peppers finely and then drain, pressing out about half of the juice. Measure two cups of this mixture into a large saucepan; add the vinegar.

Next, measure the sugar and set aside. Add pectin to prepared peppers, mix well. Place pan over high heat, stir until mixtures comes to a hard boil.

All at once, stir in sugar, and bring to a full boil, boiling for 1 minute while stirring constantly.

Remove from heat and skim off any foam. Continue to stir and skim for 5 minutes to prevent floating particles. Ladle into glasses. Cover at once with 1/8 hot paraffin. Makes 6 medium glasses.
